![]() Fans of The Good Doctor series will simply love to see actor Freddie Highmore in a successful and interesting role. By setting the backdrop of the frenzy of the 2020 World Cup and showing Spain as a European country to visit for the beauty of its setting and its monuments, Way Down (The Vault) is certainly one of the good surprises of this year 2021. It is easy to understand that the success of the cult Spanish Netflix series La Casa De papel (Money Heist) was one of the sources explaining the production of this film and we will think in particular of the third season of this one in which an impenetrable and self-founding vault is at the very center of the story. This film shows that the American cinema has what it takes to compete with the current big American productions, as it keeps you on the edge of your seat all along the story and benefits from a neat photography. She brings to Way Down (The Vault) all her fragility and her undeniable beauty. ![]() Of course they are second female roles but she illuminates each of them with her presence. We will never say again how much Àstrid Bergès-Frisbey is an excellent actress who knows perfectly how to choose the films in which she appears. I know of no company who produces a more natural cake flour. Chlorinating cake flour serves to further break down the gluten. Pastry flour has a similarly low protein content as cake flour but it's not chlorinated. On the opposite end of the spectrum is bread flour - a higher protein/gluten flour that gives bread and bagels their chewiness. The reduced gluten (protein) yields a lighter, more tender crumb. So, what's the difference? When the sugar is dissolved (after 2 minutes or so) add the popcorn. ![]() Add the sugar, salt and oil to a large pot (mine is a stainless steel stockpot that is used only for popping corn) and place over medium heat. Have ready a serving bowl and two oven mitts or potholders. I make regular stove top popcorn with just canola oil and a lot of salt (cover the bottom of the pot with oil, add about 1/2 to 3/4 cup of popcorn kernels, pop over medium/medium-high heat, dump into a large serving bowl and douse generously with table salt). It's way bigger than we need it to be (look for something around 6 quarts if you decide to become a popcorn fanatic like me) but we REALLY like popcorn.
